    寿司入口

     寿司,极干净的名字,原来的发音作SUSI,好像可以写成“苏西”,也是极美的名字。样子当然就更好看了,通常是螺旋式的弯卷米团,外面裹着一层深厚的“紫衣”,再撒上些鱼籽,或是胶着着滑腻的沙拉酱,还有的干脆顶着赤裸的肉身,妖媚惑众。

    寿司先是视觉的享受,然后才可做美味的记忆。

    爱上寿司是韩国留学时候的事情。彼时清苦,最常吃的当地小食是紫菜包饭,外表像极日式的寿司,只是做工上较为粗糙,同样的材料却是大不一样的味道。后来,在日式快餐连锁店吃乌冬面,套餐里搭配各式寿司,爱极其中一款点缀的淡绿调味酱,一尝才知不是抹茶,而是青芥,辛辣刺鼻,但,刻骨铭心。

    从这刻起,迷上寿司。

    像中国的饺子、包子、汤圆、月饼,寿司也是包裹的艺术。与前诸者不同的是,除了“内心”的华彩,寿司也有别致的外衣,更多了耐人咀嚼的层次。有时在想,不过是些生冷的材料,组合在一起竟这样玲珑可人,怎奈不可多食,三四个下肚就已深感充实,只好再去填些关东煮,回头再吃三四个便到了极限。美味如同美色,最佳境界便是浅尝辄止,贪得无厌只会觉得闷,不禁想,啊,不过如此吧!

    和青芥的命运如出一辙,寿司这标志性的日食竟也源自中国古时亦作“”,这个字首先出现于公元前34世纪的中国辞典《尔雅.释器》,其中记载“肉谓之羹,鱼谓之”,意指肉酱叫羹而搅碎的鱼肉叫寿司的另一写法“”出现在五百多年后刘熙的《释名.卷二.释饮食第十三》中记载滓也,以盐米酿之加,熟而食之也”,意指滓是种用盐、米等腌制让鱼肉发酵后剁碎煮熟后进食

    一百年后,汉字传到日本两字已混为一谈中国也停止用米来酿制食品到了明代,更从中国菜中消失了好在,这失传的美味在日本借尸还魂,更发扬光大,有了新的前途。

    寿司之美更将日人的精致与细心表现的淋漓尽致,纯手工技艺,把原始材料雕琢成清新的味道,如同将卖花姑娘调教为窈窕淑女,从蛮至雅,一种焕然一新的感受。多年来,寿司的花样屡屡翻新,色泽却始终保持独善其身的素洁,与煎鳗、烤秋刀鱼这样品相浓重的食肆摆在一起,恰好起到中和作用,使一桌料理看起来丰盛却不冗赘。

    很难想象,这样一种需要静心,甚至需要一些禅意来烹制的食肆竟出自心态复杂,时有变态的日人。这神秘而深奥的岛国总是令人欢喜令人忧,它曾有过那样血腥的过去,却又呈现出最净雅的味道,是物极必反的规律,还是与生俱来的矛盾?

    寿司入口,却生出百般纠结来。
